Buttermilk and Chive Mashed Potatoes

A lighter and healthier take on mashed potatoes that still tastes creamy and delicious. Buttermilk and greek yogurt give these mashed potatoes a nice, tangy note. Chives add a gentle onion flavor and some color. Make this in a stand mixer for easy, smooth, fluffy whipped potatoes.

Materials

  • 2 pounds gold potatoes, peeled and cut into small chunks
  • salt to taste
  • ¾-1½ cup buttermilk, warmed up a bit in the microwave or stovetop
  • ½ cup greek yogurt (optional)
  • ¼ cup chives, thinly sliced (plus more for garnish)

Instructions

  • Add the peeled and sliced potatoes to a medium pot. Cover with water. Generously season with salt (I suggest 1 tablespoon). Place pot over high heat, cover and bring to a boil. Uncover, reduce heat to a simmer and cook for 10-15 minutes or until potatoes are completely soft and easily pierced with a knife.
  • Drain potatoes well and immediately place in the bowl of a stand mixer. Add warm buttermilk (starting with 3/4 cup), greek yogurt (if using) and salt (to taste). Turn mixer on low to start mashing potatoes. Increase speed to medium. Check texture of potatoes. If a looser consistency is desired, add more buttermilk. Mix on medium speed. If desired texture and seasoning has been achieved, add the chives and mix briefly to stir in. Place in serving bowl and garnish with more chives. Serve immediately.

Notes

-if you don't have a stand mixer, drain potatoes, place back into pot and mash with a hand masher. Add remaining ingredients, a little at a time, mashing them in. Using a large spoon or rubber spatula, whip them a few times to achieve fluffy potatoes.
-warm buttermilk by microwaving for about 1 minute or heating in a small pot over medium-low heat just until slightly warm. This will keep your potatoes from cooling too quickly while whipping them.
-the amounts for the buttermilk and greek yogurt are really more suggestions. The texture will entirely depend on how you like your mashed potatoes. You can always add less or more of either ingredient depending on your tastes.
-to keep mashed potatoes warm, either place in a covered bowl on a bain marie (a heatproof bowl set over a pot of gently simmering water) or in a covered casserole dish in a low oven (200°F/93°C).
