This easy tomato and chickpea salad adds freshness to any meal. Even in the winter! Why should you eat salads in winter? Because after months of eating lots of heavy stews, soups and roasts, I love eating raw vegetables and fruits. The freshness of the raw herbs and zing from the vinegar and chili wake up the tastebuds. Also, we can all benefit from the vitamins and nutrients of eating salads anytime of the year.
A super easy and fast salad to throw together.
This one comes together very quickly. First, I start off with some vine tomatoes. I find these to be tastier, especially at this time of year. Cherry tomatoes work great though too. Next, slice the tomatoes into halves or quarters. Then, roughly chop some parsley and thinly slice scallions. Add everything to a bowl with the chickpeas (canned or home cooked) and throw all the salad dressing ingredients directly on top. Give it a few tosses and that’s it! So easy! I love not making the dressing in a separate bowl.

Here are some ideas for serving this easy salad!
- in a pita with some salty cheese, like feta or halloumi
- topped with sliced, grilled tofu, fish or chicken
- for a great vegetarian meal, serve with vegetable kabobs
- on top of flatbread slathered with hummus
- use it to top avocado toast
- serve with crispy falafel balls
- alongside a veggie or meat burger
- add cooked pasta to make it a pasta salad

Easy Tomato and Chickpea Salad
Ingredients
- ¼-½ red onion, thinly sliced
- 11 ounces (320 g) small tomatoes, sliced in half or quarters, if larger
- 15 ounce (425 g) chickpeas (garbanzo), canned or cooked fresh, drained and rinsed
- 1 cup flat-leaf parsley leaves, coarsely chopped
- 2 scallions, thinly sliced
- zest of ½ large lemon
- juice of ½ lemon
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar (or any other vinegar you prefer)
- ¼ tsp chili flakes, or to taste (omit if desired)
- salt, to taste
- pepper, to taste
Method
- Place sliced onions in sieve or small colander. Place in a bowl of ice water. (This will help lessen the onion's strong "bite". This step is optional.) Leave to soak for 5-10 minutes.
- In a large bowl, combine remaining ingredients. Drain onions well and add to bowl. Toss everything together. Taste for seasoning and adjust salt, pepper or acidity, if needed. Serve immediately.
